I've been wanting to do a post like this for a bit! I wanted to show people the truth about what a dietetics student eats. I can tell you that this day of eats was not really like my normal routine. I was out of the house for a majority of the afternoon so I couldn't have my normal afternoon snack or coffee....womp womp....but whatcha gonna do!
Let's start off with good ol' breakfast! (which is my absolute favorite)
I usually like to start my morning off with something that involves veggies, fruit and protein.
So below we have sautéed spinach with 2 eggs and some egg whites (it looks massive in the picture). In The bowl we have quick oats, 1 Tbsp. chia seed, sliced strawberries and some blueberries. I love this breakfast just because it involves some nutrient dense foods, fuels me for a workout, and keeps me full for a majority of the morning.
Next we have lunch!
I love having salads for lunch because you add all the veggies you want! I know that people get tired of salads but you can literally do so many variations that it doesn't get boring!
In this salad we have spring mix, pumpkin seeds, sliced tomatoes, sliced red onions, low sodium black beans, boiled chicken breast and Bolthouse Salsa Verde Dressing. Bolthouse has a measly 40-50 calories per serving (2 Tbsp!) which is why I always buy their dressings.
On the side I usually have a whole grain like 2 slices of ezekiel bread or whole grain crackers. I do this because this is my post workout meal and you need to fuel yourself with carbs especially after a weightlifting session. I fuel with whole, fresh foods right after a workout because it feels awesome :)
So this is the part of my day that was not like my usual routine. I would usually have 2 rice cakes or whole grain bread with natural peanut butter and a banana. I would also have a cup of unsweetened vanilla almond milk with an iced coffee on the side. This is definitely my go to!
But today I ended up being in the Cranston area at Garden City. My boyfriend and I stopped at a little place called B.Good. It has all local vegetables, kale bowls, delicious fresh salads and sandwiches.
So I went with a berry salad which had a bed of fresh spinach, strawberries and blueberries, goat cheese, candied pecans, figs, and chicken topped with balsamic dressing. It was....delicious! And I picked off of my boyfriends plate for the sweet potato fries. Ad you can tell from the picture....I forget a lot to take a picture of the food before I eat it. I'm very impatient with my food lol
When we got home we stopped at our local bakery to grab an afternoon coffee and I had a small square of 88% dark chocolate. I love the bitter stuff ;)
Dinner is always made by my amazing mother who is an awesome cook.
We had pan seared tilapia with broccoli, corn, tomatoes and cucumbers in a light vinaigrette dressing. I always love to put apple cider vinegar on top of my tilapia.
This we had dinner pretty early I always get hungry around 9-ish or so. So I either settle for a bowl of special K protein cereal with almond milk and some peanut butter. If not then I usually grab some cottage cheese with peanut butter to keep me full throughout the day. And unfortunately I do not have a photo for this one!
But I hope this gives you a good idea of what a dietetics student eats during the day. I also weight lift so this is probably a good amount of food compared to what others eat. I try to eat a god amount of food but sometimes it'x hard especially since I always have high fiber foods that make me full faster.
